They use compostable carryout packaging, recycled paper napkins, have solar panels on their food vending cart (and can go completely off-the-grid for almost 2 hours), they purchase ingredients in bulk to reduce packaging, and strive to produce as little waste as possible every day. They also purchase as much local ingredients from local farmers as they can — which means no packaging and directly supporting small farms.
