They reuse their cardboard produce boxes, and repurpose them for other needs, and compost pulp from the juice extraction process. All appliances are energy efficient, they reused barn wood to decorate, the work lights are of the highest energy rating, and they use biodegradable bags for the small amount of waste they do create.
Roji Tea Lounge provides an east meets west, traditional / modern atmosphere with music, exotic teas and desserts. The Rouge Tomate Cart in Central Park is a seasonal outpost of the restaurant that offers delicious, healthy and eco-friendly alternatives to traditional street food. Designed by renowned architects Bentel & Bentel (also responsible for our restaurant), the cart has solar panels, energy-efficient equipment and fully biodegradable or recyclable serving pieces.
During fair weather, the Rouge Tomate Cart can be found in front of the entrance to the Central Park Zoo on 64th street at 5th Avenue. It is open to the public throughout the warm season, weather permitting.
